The Fish Salting Factory

The Roman factory at the Castillo de la Duquesa was a busy industrial centre. Workers cleaned and cut fish, layering it with salt in large rectangular tanks. The mixture was left to ferment in the sun for several weeks to months. The final product was garum, a salty, pungent sauce that was highly prized across the Roman Empire. It was used to flavour many dishes. This industry made the site very prosperous for centuries.
